Crawfish Boil Recipe
Every year, my friend Anna & Andrew’s crawfish boil is one of the most anticipated events! They usually bring together around 15-20 friends and family and cook over 70 pounds of crawfish. Even though peeling crawfish is a tedious process, standing and eating at the table with friends is such a fun experience. Below is my friend’s recipe that they have used for the past 3 years for their crawfish boil. It’s always been a hit so try it out and let us know how it goes!
How much crawfish to make?
A good rule of thumb for a large boil is to budget around 3 pounds of crawfish per person. With added potatoes, sausages, corn, and other items, this amount is great for a group where some folks may have more and some my have less than 3 pounds.
Crawfish Recipe
This recipe is for about 30 pounds of crawfish, a good amount for between 8-10 people. Scale the recipe accordingly!
Ingredients
30 pounds of live crawfish (typically 1 sack of crawfish)
Seasonings
Louisiana crawfish mix (3 pounds)
Chicken Bouillon powder (3/4 cup)
Zatarains shrimp and crab boil concentrate (3/4 cup)
White vinegar (3/4 cup)
5 oranges
10 lemons
5-8 cloves of garlic
1 stick of butter
3/4 cup of salt
Additional
Sausages
Red-skin potatoes
Mushrooms
Corn
To PREP
For this volume of crawfish, the typical ratio is 2 quarts of water per pound of crawfish. This means for a 30 pound sack of crawfish, you should probably use a 60 quart pot or larger (100 quart pot), and preferably a dedicated crawfish pot that comes with a strainer. This also means you might need a propane gas setup outdoors for this boil.
You’ll also want a HUGE wooden ladle or paddle to stir the crawfish. This will also come in handy when you need to lift the strainer from the pot!
To Cook
Clean the crawfish: This helps get some of the gunk out. You can put the entire sack in a large cooler or container and fill and drain it with water at least a few times.
Fill the boiler about halfway full and mix in all the seasonings and
Half the oranges and lemons, squeeze them into the pot and then throw in the skins as well for flavor.
Add in the corn and the potatoes
Bring the whole mixture to a boil for 10 minutes
Add in the crawfish and boil for 5 minutes
Shut off the heat and then soak for about 20-25 minutes.
Add in the sausages and mushrooms.
Strain the pot and ENJOY!
